The Best Healthy Peanut Butter Granola

ATTENTION you must make this granola ASAP. I can attest it’s the best healthy granola recipe out there. Trust me, I’ve tried a handful of recipes. Put that store bought granola down. Make this recipe and you’ll never go back.

Tips:

  • The edges cook faster. To prevent burning make the edges thick. See my before picture on how I put it on the pan.
  • Don’t forget to stir halfway. This ensures even crispiness πŸ˜‰
  • Refrain from eating it straight out of the oven. Let. it. cool. I know, it’s going to be hard. But, you have to… because when it cools, it gets crispy. And that’s what you want!
  • If you’ve never made homemade granola before, here’s the tip for telling when it’s done. Let a piece of the *golden* granola cool for a couple of minutes, if it gets crispy then it’s done.

How to Eat This Granola:

  • Plain. Yep, it’s that good.
  • In milk. Granola can be cereal too, right?
  • With yogurt. Make a parfait out of it.
  • On a sweet potato boat! With more nut butter ofc.
  • If you’re putting nut butter on something you might as well add some granola on top.
  • In some oatmeal. Gotta love that crunch.
  • On top of a smoothie. I’m not a smoothie person but you do you girl.

Recipe from joyfoodsunshine.com. Enjoy!

Ingredients:

  • 2 cups rolled old-fashioned or quick cooking oats (I used rolled)
  • 1-2 tsp ground cinnamon (I like it cinnamon-y)
  • 6 tbs natural peanut butter
  • ΒΌ cup honey
  • A dash of vanilla extract
  • Salt to taste!

Instructions:

  1. Preheat the oven to 325 degrees F. Line a baking tray with parchment paper.
  2. In a small bowl, mix together the oats and cinnamon.
  3. In a large microwave safe dish or on the stove, melt the peanut butter and honey together until smooth.
  4. Remove from heat and stir in vanilla.
  5. Stir in dry ingredients and mix until well combined. Salt to taste.
  6. Spread granola onto the baking tray. The edges cook faster. To prevent burning make the edges thick. See my before picture.
  7. Bake for 15-20 minutes, or until granola is golden. Don’t forget to stir halfway. Let a piece of the *golden* granola cool for a couple of minutes. If it gets crispy then it’s done.
  8. Refrain from eating it straight out of the oven. Let. it. cool. I know, it’s going to be hard. But, you have to… because when it cools, it gets crispy. And that’s what you want!
  9. Now eat πŸ™‚
