Chocolate Chip Cookies

Want some healthy chocolate chip cookies that ACTUALLY taste good? Then you’ve got to try these chewy cookies!

I’m almost finished with my online summer classes, statistics and microeconomics. Taking classes over the summer is a blessing and a curse you know. They’re easier but the course length is much shorter. So you suffer through it and have a ton of homework all at once. But it’s worth it because then, during the school year you don’t have to deal with these classes. I’m drowning in homework. I’m fine it’s fine. So, I decided to take a break and do something that makes me happy. Baking cookies :). I’m so happy because I finally nailed this recipe! YESSSS.

Also, you know me, I like to make healthy versions of classic favorites like chocolate chip cookies. I’m on a mission to make healthy taste good.

I found this chocolate chip cookie recipe from cultivatewithkruti here. It’s her recipe cut in half, but with double the amount of egg and a little bit more sugar.

Ingredients: (makes 9 cookies)

  • 1/2 cup nut butter (I used my DIY almond recipe here)
  • 3-4 tablespoons coconut sugar or brown sugar
  • 1 teaspoon coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1 egg, slightly beaten
  • 1/2 teaspoon baking soda
  • 1/4 cup chocolate chip

Directions:

  1. Preheat the oven to 350ยฐ.
  2. Mix together the nut butter, sugar, coconut oil and vanilla. Next, add the egg.
  3. Stir in the baking soda until just combined.
  4. Roll the batter into small balls and place on the cookie sheet. If the batter spreads out a little that’s ok. These cookies totally puff up once in the oven.
  5. Add the chocolate chips on top last to get aesthetically pleasing looking cookies ๐Ÿ™‚
  6. Bake for 7-8 minutes.
