Have you ever made a strata? Yeah me neither. Hey, there’s a first for everything. Now, go grab your stale bread because you’re PUDDING it in this casserole. Link is in my bio. 🥖 Ingredients: (from hummusapien.com) 1 tbsp extra virgin olive oil 1 large onion, diced 2 crowns broccoli, cut into florets 8oz basket of mushrooms, sliced 1 cup grape tomatoes, halved (I used red bell pepper instead) 6 heaping cups cubed bread (stale is best) 8 large eggs 1 1/2 cups milk (I used unsweetened almond milk) 1/2 cup plain Greek yogurt 1/3 cup cream cheese, softened 1 heaping tsp Dijon mustard 1 tsp kosher salt Freshly ground black pepper 1 1/4 cups shredded cheddar or feta cheese, divided 🥖 Directions: (from: hummusapien.com) Spray a 9×13″ casserole dish with cooking spray. Heat oil in 1-2 large pans over medium heat. Saute the onion with a pinch of salt for 5-7 minutes, or until softened. In another pan saute the broccoli, mushrooms and peppers for about 7 minutes. In a large bowl, whisk together the eggs, milk, yogurt, cream cheese, mustard, salt, and pepper. Make sure there are no clumps. Stir in 1 cup of cheese, the bread and veggies. Add the mixture to the casserole dish. Cover and refrigerate overnight. Remove from the fridge and preheat the oven to 350F. Bake for 55 minutes. Add the remaining 1/4 cup cheese and bake for 5 more minutes or until set. Find the recipe in my bio! 🧁 Ingredients: (from hummusapien.com) 1 3/4 cups whole wheat pastry flour 1 cup cane or coconut sugar (use 3/4 cup for less sweet muffins) 2 tsp cinnamon 1/2 tsp ground ginger 1/2 tsp nutmeg 1/4 tsp cloves 1/4 tsp allspice 1 tsp baking soda 1/2 tsp salt 15 oz pumpkin puree (canned or fresh) 1/2 cup unsweetened almond milk 1/4 cup avocado oil or coconut oil, melted 🧁 Directions: (from: hummusapien.com) Preheat the oven to 400F Grease a muffin tin well or use muffin liners. In a large bowl, whisk together the flour, sugar, cinnamon, ginger, nutmeg, cloves, allspice, baking soda, and salt. In a medium bowl, whisk together the pumpkin, milk, and oil. Pour the wet ingredients into dry ingredients. Mix together until combined. Don’t over mix! (the batter will be thick) Spoon the batter into muffin tin filling just about to the top. Bake for about 23-28 minutes. They’re done when a toothpick or knife comes out clean! Link in bio. 🥦 Ingredients: (from @inspiredtaste) 1/4 cup fresh lemon juice (1 large lemon) 1/4 cup tahini 2 tablespoons extra-virgin olive oil, plus more for serving 1 garlic clove, minced 1/2 teaspoon ground cumin 1/2 teaspoon salt 1 15-oz can of chickpeas 2-3 tablespoons water 🥦 Directions: Drain and rinse the chick peas. In a food processor or high speed blender, whip/cream the lemon juice and tahini for 1.5 minutes, scraping down the sides after 1 minute. Next, add in the oil, garlic, cumin and salt and process for 1 minute, scraping down the sides half way. Add half of the chickpeas and process for 1 minute. Scrap down the sides, add the remaining chickpeas and process until thick, about 1-2 minutes more. To thin out the mixture add 2-3 tablespoons of water until creamy and smooth. Ta da! Drizzle with olive oil and let the snack time begin. Tip for cleaning your blender or food processor: Add soap and water and blend.
