Sloppy Joe’s

My dad had some leftover ground beef that he wasn’t going to use so he generously donated it to me (thanks dad). So, I went searching for a beef recipe on my recipe document. There were two that I have tried before and loved but nothing I hadn’t tried yet. I guess I don’t crave a ton of ground beef recipes. However, I do love steak recipes.

When I cook with ground beef I like to do stuffed peppers or sloppy joe’s. Today, my soul was leaning towards sloppy joe’s. I wanted something filling and that meant eating a bun. Yum carbs! All I needed to complete the recipe was some tomato paste. I ran to the store to get it and I was ready to go. It’s kind of weird that I was craving this warm and filling meal. Hm, maybe it’s because it won’t fricken stop raining in JUNE.

Check out these sprouted whole grain burger buns I bought from Silver Hills at Fresh Thyme. Their grains are sprouted by soaking them in water in a controlled environment until they sprout. You can read more about this on their website.

Why I’m a fan of buying sprouted products:

  • Sprouting breaks down starch making them are easier to digest.
  • Increases the amount and bioavailability of vitamins and nutrients.
  • Decreases phytic acid, an antinutrient, which blocks the absorption of calcium, iron and zinc.
  • Other new research indicate some sprouted grains may fight diseases like diabetes and depression.

Here’s Rachel’s recipe: “Not Your Average Sloppy Joe’s” (I did not motify anything):

  • 1/2 white onion
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • 1/3 cup ketchup (I used Tessemae’s)
  • 1 cup tomato sauce
  • 1-2 tsp Worcestershire sauce
  • 1 lb grass-fed ground beef
  • 3-4 mushrooms, sliced
  • 1 can tomato paste
  • 1/3 cup water
  • 1/2 tsp paprika
  • 1/2 tsp pink salt
  • 1/2 tsp ground pepper
  • 4 hamburger buns (I used Silver Hills)

Mmm. All the goodies whipped up into sloppy joe’s.

Rachel’s Directions:

  • Brown the meat in oil for about 3 minutes on medium heat. Then add the onion, bell pepper and mushroom. Cook for 3-5 more minutes.
  • Stir in the rest of the ingredients. Simmer on low for 10 minutes.
  • Toast your buns and serve!
